Croquetas
A common “left-over” dish where you can throw many things into it.
Croquetas de pollo

Slowly cook onion and shred roast chicken by hand
- Make Roux, just until smelling toasty and add milk & heavy cream.
- 2 tsp salt and black pepper, nutmeg
- Add chicken
- spread out in a sheet pan and refrigerate for a couple of hours
- roll it
- prepare flour -> egg & water -> blended fine panko
- fry.
