Macaroni and cheese

- Simple version (pasta, milk, cheese)
- Put macaronis into a pot
- Pour milk so that macaronis are barely covered. Salt lightly.
- Simmer (don’t use high heat)
- shred/break cheese
- Begin to taste to check the pasta. Add milk as necessary
- When it’s done, turn off the heat, put cheese, and mix.

- 375 degrees
- buttered round baking pan
- Blend: 1 cup cottage cheese, 2 cups milk, 1 tsp dry mustard, cayenne, nutmeg, 1/2 tsp salt, 1/4 tsp black pepper
- mix it with less than 1 lb (1/4 reserved for later) grated cheese (sharp cheddar) and uncooked 1/2 lb pasta. foil tightly and 30min
- stir, put remaining cheese, butter, uncovered 30min until browned.
- let it cool for 15 min
